This box of spaghetti caught my eye coz it is made with only edamame and water, super duper clean right? The nutritional elements are also awesome. A 2-ounce serving packs 24 grams of protein, 11 grams of fiber, 55% of Vitamin C, 30% of Iron and 13% of Calcium. 
 
  • Boil the spaghetti as per the instructions on the box. 
  • Take one teaspoon olive oil, warm it a little and add one medium size roughly chopped white onion to it. Saute a little and add 4 cloves of roughly chopped garlic to it. 
  • After a minute add one cup of spinach, cook it a little and then add one cup of frozen or fresh peas. 
  • Once the peas get a little softer, add lots of basil leaves( I love the taste of basil), salt, black pepper, and lemon juice. 
  •  If you want then you can also add other vegetables or herbs at this stage or add it later once it’s fully cooked. I added chopped tomatoes at the time of mixing.
  •  Add the peas and spinach mixture in your #vitamix and make a smooth blend. Here your sauce is ready. You can taste the sauce before mixing it with noodles and adjust the salt accordingly. 
  • Serve the edamame spaghetti noodles topped with this delicious green sauce and garnish with grated cheese and walnuts.
